The Crew Favorite – Blue Ribbon Hotdish

This is by no means healthy but the guys love it! I make it frequently when we’re on the road.  I love it too, but usually eat something else when I make this.  I try not to eat processed foods, carbs or sugar and feel much better because of it.  I got this recipe from a coworker (Thanks, Julie!) I’ve seen several variations of it.  It is the perfect meal for supper in the field on the tailgate!

Blue Ribbon Hotdish

2 lbs. Ground Beef

6-8 Potatoes

1 can Tomato Soup

1 can Cheddar Cheese Soup

1 soup can of Milk

Pepperoni to cover the top

pinch of Parsley

pinch of Oregano

1 tsp. Sugar

1/4 cup Water

Mozzarella for the top

Brown ground beef and place on bottom of casserole dish or crock-pot.  This makes a lot – find something big! 

Mix cheddar cheese soup and fill soup can with milk. Stir together soup and milk then pour on top of hamburger.  Peel and slice potatoes. Place potatoes on top of beef.  I use a mandolin for my potatoes which helps them cook evenly.  It’s OK if you don’t have one.  

Mix tomato soup, parsley, oregano, sugar and water.  Pour on top of potatoes.

Place pepperoni on top of potatoes.

I usually let it cook then add my cheese right before its done.  The cheese is perfectly melted by the time we get to the field.  You can cook it in a crock-pot on low for 8 hours or until potatoes are done or in a 13 x 9 pan @ 350° for 2 hours or until potatoes are done.  If you are in a hurry; peel and slice the potatoes then boil them until tender while you are browning the hamburger.  This helps insure they are cooked and you should only have to bake it for about 20 minutes.  Works great for a quicker meal! This makes quite a bit, but the leftovers are delicious and don’t last long around here!  It’s their absolute favorite! You can easily add mushrooms, peppers, onions or other pizza toppings if your crew is not picky.  This seems to be the perfect combination for our crew.

February #catchthemoment Week #6

I can’t believe we are 6 weeks into 2014! It’s been another bitterly cold week – lots of below 0°F weather. It’s been blowing or snowing every other day.  We’ve been working in the house and shop a lot!  Here are my pics from week #6.

Brett was bundled up ready to play outside for a little while. It was around -10°F. We went from the house to the shop! Lots of work for a 2 minute walk!

This is somehow a comfortable position.  Brett was having fun with an iPad while I was making dad his favorite chocolate cake.

I made this quilt for our daughter Kayla.  This was my 2nd quilt project since starting last year, but I just completed it.  She turned 20 today!

The boys and I went swimming with friends.  Brett only went down the waterslide once since it shot us right under the water at the end.  He was understandably leery after that! He’s going again on Friday. I hope he’s not scared of it!

We have our 1st tomato on our Aerogarden plant!  It’s a little hydroponic garden.  There are many more tomatoes to follow.  We love getting fresh tomatoes in the dead of winter!

Brett enjoyed a big chocolate chip cookie after lunch.  I think it took him 20 minutes to eat it!

Sadie couldn’t take it anymore.  She stayed up too late waiting for me to finish sewing.

February #catchthemoment Week #5

Friday we attended the farm show in Minot, ND.  We had supper at Kroll’s Diner before we left town.  Our boys shared one of those rare sentimental moments.

Max & Brett shared a bowl of leftover chili for supper.  Some days they get along so good! This has been an exceptional week for them!

Sunday we went to pickup our old car for a good washing.  We have it up for sale this week.  It’s a 1964 98 Oldsmobile with all the electric gadgets.  Pretty high tech for then! We bought it last year from my husbands’ cousin but never seem to have time to drive it.  The boys love riding in it!

The sunset at the Devils Lake, ND airport while we were picking up the plane from its annual.  Sometimes it’s hard to pick just one.  I had to throw in a plane pic after its annual with the shiny prop.  It won’t last long!

I cut open this tomato and found sprouts while making homemade tomato soup.  I’ve had sprouted peppers & squash, but never a tomato!  I should’ve planted it!
