An Update

We are still in Pond Creek, OK we only have a few days left here but it has rained almost every day. We were able to combine on Saturday late in the day but then another storm came thru during the night and it rained a little Sunday afternoon. The thunder is so loud here! We have had 3 severe thunderstorm warnings with high winds up to 70 mph predicted since we arrived. We have been lucky so far, but it is very nerve-wracking when you see the storm chaser vans in the area and knowing we are staying in a camper doesn’t help. We sat in our pickup out at the farm one night as a storm came thru. We have a tornado watch until 2 am Monday and it is supposed to be 97 tomorrow. We did have a little break from the heat this week.

Macaroni Salad

This is our favorite Mac salad recipe. Don’t be afraid of the long ingredient list it’s a pretty good recipe.

Macaroni Salad

4 oz. Ham, chopped
4 oz. Kojack cheese, chopped
1/2 cup dill pickles, chopped
1 cup Miracle Whip or Mayo
1 Tbsp yellow mustard
4 Tbsp pickle juice
1 Tbsp sugar or sugar equivalent
2 tsp dill weed
salt & pepper to taste
6 oz. elbow macaroni
1 cup frozen or fresh peas

Boil macaroni and add peas the last minute of boiling. Rinse under cool water. Prep ham, cheese, pickles. Add miracle whip, mustard, pickle juice, sugar, salt and pepper. Add peas and macaroni. If you have leftovers you can add pickle juice to make it creamy again as the sauce seems to absorb overnight.
